Make and Enjoy This Healthy, Delicious Cauliflower, Ginger, Coconut, Turmeric Stew

Comforting, healthy and tasty, this particular stew will charge your metabolism, boost your immune system and fill you up with essential nutrients. Cauliflower, Ginger, Coconut, Turmeric Stew

This nutrient-dense, rich in fiber and healthy fats stew requires plenty of veggies and spices:

  • Cauliflower, 1 large head, cut into small pieces,
  • Onion, 1 large, chopped,
  • Tomatoes, 3 medium ones, chopped,
  • Jalapeno, 1 small, stemmed, seeded and chopped,
  • Kale, 1 cup,
  • Cilantro, handful, chopped,
  • Ginger paste, 2 teaspoons,
  • Turmeric powder, 1 teaspoon,
  • Cumin powder, 1 teaspoon,
  • Coriander powder, 1 teaspoon,
  • Coconut oil, 2 tablespoons,
  • Full fat (unsweetened) Coconut milk, 1 can,
  • Salt, 1 teaspoon.

 

Preparation:

Heat the coconut oil in a stock pot. Add onions and cook until they’re soft and golden. Add tomatoes and cook until they soften. Then, add the rest of the ingredients and stir well. The veggies should release water but make sure you cook them on low heat. Cover the pot and let it simmer for about 25 minutes,  making sure you stir every 5 minutes.

This recipe is for 4 people, so enjoy it with your family or invite some friends over. If, however, you want to cook for yourself only, feel free to store the leftovers in an airtight container and place it in the fridge – you can then eat it the next day too.

The health benefits of this stew are numerous. First, cauliflower is a vitamin C and K rich cruciferous vegetable that is amazing for the immune system. It’s also rich in folate, magnesium, potassium, niacin, riboflavin, manganese, etc.
